oh whoa whoa whoa what are we getting
going we are having tofu curry tonight
and best of all I get to cook this
outside sounds delicious
so the first thing I'm going to do is
I'm going to go ahead and drain the
fluid out of the tofu and then I'm going
to sandwich it between paper towels
trying to draw out as much moisture as
possible we're gonna fry this up and we
don't want to steam it while it's
getting all the moisture out or as much
as it can I'm gonna go ahead and prep
all the veggies and get started on my
three

the veggies that we picked up at the
local farmers market and I love by his
seasons and I think it'll go really well
with the curry

so all waiting for the tofu the drain
I'm gonna go ahead and start the side
and it really goes with everything
couscous rice tonight we're gonna do
quinoa
[Music]

so one of the things I've just got
introduced to with quinoa and I actually
really love using it because it's very
versatile and what I do because this is
going to be with our vegetarian tofu
curry is that I'm gonna use vegetable
broth to kind of flavor the quinoa come
on you can't put chicken broth in there
at least beef broth baby no I guess I
can do that with something else but
anyways I let it boil up and then I put
it down to a simmer and just cover it up
and cook it just like rice the tofu is
as dry as it's going to be I'm gonna go
ahead and keep this up and fry it in a
little canola oil

so the rod of our boat is the person who
cooks and so I try to make a conscious
effort and using only one oh you do you
oh my goodness one time will see me that
you don't that I don't do that okay I'm
gonna show a shot of the sink after
dinner tonight okay you do that cuz I'm
using one pot what about the quinoa pot
they keep us - okay that's two pot two
pots for a full meal okay

oils hot so it's time to put in the top
tofu is already and I am now going to
start on the veggies I'm getting there
I just want to get some of the excess
oil out and then we'll go ahead and
saute all the baby

before I add the beans I'm gonna go
ahead and add the curry paste to kind of
let it marinate in there I don't like to
overcook my vegetable
oh yeah nobody likes mushy vegetables no
but at the same time adding the paste
and infuses the flavor is so I like
using okay I probably will change up and
use the powder later on but right now
can you taste the difference I like the
one you're using though and I try to
cook it up and then add the coconut milk
laughs well is it good
there's a perfect Christmas nice dice a
Christmas Merry Christmas Christmas
Christmas hmm okay time to add the green
beans and then after that will be the
coconut oil
what smells good later we add the
coconut oil

some all that is simmering I'm gonna go
ahead and take a break it up break d
deserve a break yes I deserve right I
got five minutes I'm going to enjoy a
