Oh where are you going
I don't I told you I'm gonna cook as I
cook I find it's raining I don't care
this is raining we live in the Pacific
Northwest it's gonna rain and I wanted
to do this all week so I'm cooking
outside I am stubborn tonight okay what
do we haven't we are having oh I love
those I know I stumbled upon this by
accident actually and
okay so what's first well I'm gonna
marinate it just like how we do with
chicken adobo you'll see that's good
chicken adobo is kind of like a comfort
food it's a Filipino dish and I
discovered it one time a girlfriend made
for me and I loved it she made it on her
boat and it just consists of soy sauce
apple cider vinegar ground pepper and
garlic I use a skin on bone on chicken
thighs that's it that's it that's it
yeah okay so you're gonna marinate it
overnight no I'm gonna marinate for
about 20 minutes oh good 30 minutes and
then we're gonna get cookin sounds
delicious
what I'm doing now is just cutting up
the excess and trimming up the excess
skin you don't need all of that I just
like to have a little bit up on top and
then we'll toss it in the marinade

Verde it's done now I'm going to drop
the chicken thighs in there and let it
just marinate for about 20 minutes

oh you're serious you are going outside
I'm gonna do it okay it's you know it's
still raining out here I don't care it's
been a crappy winter and then when I say
that summer is here summer is here
it's drizzle and 59 out here so what
it's not freezing okay I have to barf
out here we're gonna do this okay I'll
give it to you today I'm gonna cook
everything in a Dutch oven so while this
is heating up I'm gonna show you the
mere name looks pretty good huh smells
pretty good yeah it only took 20 minutes
okay so the Dutch event is warm enough
so I'm going to just add a little oil
and it's time to sear
and I'm making chicken adobo okay so I
browned everything we're putting the
rest of the chicken back in here the pot
now I can crowd it add all the juices in
there
and then put the rest of the marinade in
here
it's in there
and then I'm going to add a little water
just to almost like we're covering it
and I'm gonna braise it you guys called
down over here getting his energy out
yep so we're halfway through the
braising process the wind kind of slows
it down a little bit but at this point
you like to add some place scallions and
I cut a little rough chop and some
onions as well and I'll toss that in I
don't like to overcook them which is why
I put it in halfway

someone continues phrasing I am going to
do my topics which I really have the
spring mix which consists of the usual
green onions onions and cilantro and
then I'm going to cut up actually I'm
going to mince up some cabbage and I
like the cabbage on top and just because
it has a little crunch and has a little
brightness to it and what's a talk or
without cabbage let's check out how it's
looking oh I'll tell you how it's
smelling that does smell amazing doesn't
it yeah
needs a couple more minutes it's pretty
tender
it is looking pretty good all right so
we've been braising for quite a while
now and I think it's done next thing
that we do is it's a little liquidy
right now so I'm going to just take the
lid off and just let it reduce until it
gets really nice and thick and soft

they're getting annoying today aren't
they nothing is getting the way of my
cooking okay so they're taking a little
bit longer and I don't want to overcook
the chicken so I'm gonna take this out
and just muscle through the sea plane
noise yeah just muscle through it and
reduce the sauce so then it gets really
thickened
you tease me that little bite I want to
tell us what it well yeah so at this
point I have debone the chickens and
reduce the sauce you can serve this over
rice at this point and have a delicious
meal but we're gonna kick it up a notch
and do some chicken adobo street tacos
get around crispy
